三峡美食:艄公号子鱼(图)

  ★艄公号子鱼

  原料:胖头鱼、苕粉、青椒、小米辣椒。

  做法:胖头鱼宰杀去内脏洗净,苕粉泡好放入盘内垫底,将鱼头鱼尾切下放在盘两端,中间鱼肉切片摆好,上笼蒸约8分钟至鱼头熟时取出,撒上青、红椒圈,淋少许热油鱼汁即成。

  特点:重庆山峡酒楼的这道菜是长江三峡的艄公们喜欢吃的佳肴。

  ★乡村鲜花椒鸡

  原料:仔公鸡、鲜花椒、野山椒、青红美人椒。

  做法:仔公鸡洗净宰成6分大小丁,青、红椒切成马耳朵形。锅内下入油烧约6成热,下鸡块爆炒约7成熟时下入鲜花椒、野山椒、美人椒炒香,调入味精、盐、红油炒匀即成。

  特点:重庆江津地区四面山之鲜花椒与农家的土鸡合烹,清香味厚,是当今重庆新派特色菜。
